Description
Brewed with Kyokai No. 77 yeast and using the traditional Yamahai method, this sake is an experimental brew from Hiraizumi Shuzo. Kyokai No. 77 produces high amounts of acidity - especially malic acid, making this a juicy sake. A bit of residual sugar balances out the acidity and gives the brew a much fuller body and presence than it might otherwise have. White wine lovers will enjoy this sake.
