The sharp sweetness and the rounded bitterness make for a well-balanced sake. It has mild toasted and earthy aromas. This sake is brewed with a special local sake rice called Ise-Nishiki that Gensaka brewery produces on its own fields. It is produce using the Yamahai method. The Yamahai method is a traditional brewing method which gives the sake richer and deeper flavors. This makes the sake pair well with flavorful dishes such as simmered fish and hot pots. During the 2016 G7 Summit held in Ise, this sake was selected for the working lunch and offered to the leaders of each country.
