This is a limited seasonal sake, made from Yamadanishiki rice, aged in a “Yukimuro” (a hybrid fridge cooled both with snow and electricity) during the summer. The result is a rich sake, which is quite a contrast to the Tanrei-Karakuchi sake Kakurei is known for. The aromas are mellow with slight fruity aromas, with a thick mouthfeel, and a deep richness and umami. The finish is well-balanced with moderate acidity and a refreshing sharpness.
You can enjoy the mellow taste of autumn, which is a different experience from fresh sake. This sake goes well with strong flavoured foods, such as salt and soy sauce based dishes.
