Description
A mellow and rich seasonal sake. This sake has a good mouthfeel with a pallet of well-balanced sweet flavors, with grape like aromas. Hiyaoroshi is a general term referring to sake that has been pasteurized once in the winter and then allowed to mature over the summer before distribution in the autumn months. Hiyaoroshi’s summer maturing process allows flavorful components to further coalesce and get to know each other, resulting in a bottle with boosted umami, and a balanced, less hard-edged profile.
*Hiyaoroshi sake's are not pasteurized for the second time before bottling. This results in a sake with some live yeasts and koji. Therefore refrigerated storage is advised and we do not recommend to keep this sake for a long time.
